From the owner of Bleu Boheme, Encore Champagne Bar & Dining Room is a new concept set to come to San Diego - a champagne-centric destination in the heart of the Gaslamp with a French-inspired menu, scheduled to open off 6th and F this December. The former L.A. Rack Casual Ware space now features a large bar and dining room and will offer champagne, sparkling wine, caviar and much more, a bubbly-inspired spot sure to enhance the San Diego bar and dining scene. Encore will serve lunch and dinner seven days a week, along with brunch on Saturday and Sundays.
Ken Irvine with Irvine Hospitality Group, the brilliant chef and owner of Bleu Boheme in Kensington, is developing and launching Encore, alongside recently appointed Executive Chef Ryan Studebaker, formerly with Solace & the Moonlight Lounge (and Brian Malarkey's Gingham before that), and General Manager Maija Talikka, an innovator in wine and champagne bar concepts with proven success in New York and Paris.
Although the menus are still under construction, we've got our hands on a sampling of champagne drinks you’ll likely find on the cocktail menu, including La Femme de Violette. Served up in a Champagne Coupe, this combination of Martin Miller's Gin, Creme de Violette, Raspberry Liquer, Lemon simple syrup, Egg white, and Champagne whispers subtle hints of perfume with its floral aroma and delicate herbal perfume. Sweet, sexy and poetically seductive with a silky texture and a shimmer of Champagne.
