It's been over 2 years since we announced that Bird Rock's Bella Roma Pizza would become Wheat & Water, but the modern pizza-pub is finally ready to unveil. Currently in its soft opening stage, W&W will grand open to the public on Tuesday, November 1, offering a stylishly urban design meets seaside neighborhood vibe with a menu of wood-fired pizza, shared plates, salads, charcuterie boards, wine, cocktails, and of course, San Diego craft beer.
Wheat & Water is owned by Ted Cochrane of the Neptune Restaurant Group, a San Diego native who fell in love with the restaurant industry from his first job at La Jolla's El Pescador. The 3,200 square foot restaurant is located a stone throw from Windansea Beach and has received a complete redesign to give it a modern-industrial vibe. Expect wood tables, exposed brick walls, Edison bulb lanterns, roll-up garage doors, and an ample outdoor patio overlooking La Jolla Boulevard.
The kitchen is in the hands of Executive Chef Colton Lemmer, a classically trained chef that has spent time in the kitchens of such notable San Diego establishments as Pamplemousse Grille, Hotel Del Coronado and Chef Matt Gordon's now-defunct Sea & Smoke. The menu will be centered around the eatery's California-made Forno Bravo white-oak-fire-fueled pizza oven.

There will be over a dozen varieties of hand rolled red & white pies on the menu, using dough made with locally-milled, organic flour. Expect exciting varieties like the Pork & Potato gratin with scalloped potatoes, crispy pork belly, in-house roasted garlic & tomatoes and braised leaks; and the Carne Asada with thinly sliced marinated skirt steak topped with padron peppers, grilled leeks, queso fresco and cilantro. There will also be a unique variety of shared plates like goat cheese fritters, chicken mousse sausages, beef cheek pierogis, hamachi crudo, pork crepinettes and more, as well as a focus on charcuterie and cheese and a bunch of salad options. From the bar, expect a variety of beer from local and national breweries from more than 20 taps, wines hailing from California and Europe, and a cocktail list of originals and classic concoctions.
