Earlier this year
we broke the news that San Diego's Cohn Restaurant Group was revamping its former 100 Wines space in Hillcrest into the 4th incarnation of its French-bisto BO-beau concept and taking over the neighboring space for the
city's first 100% for-charity eatery - Libertad Tacos a la Brasa - and a Parisian speakeasy cocktail lounge - Caché. We are excited to report that all three concepts will open on May 18!
BO-beau Kitchen + Caché is a dual concept in and of itself - one part French-inspired bistro, BO-beau Kitchen - with a hidden speakeasy-like craft cocktail bar - Caché - accessible through a secret freezer door. Nextdoor, Libertad Tacos a la Brasa is a 100% for-charity casual modern taco eatery with a menu centered around a custom wood-fired grill. All three concepts were designed and will be managed by longtime CRG member Phillip Bertran.
BO-beau's Hillcrest menu will be similar to the three other locations, inspired by Bohemian France with a menu helmed by Executive Chef Alex Weltz. The new BO-beau will have a Parisian-inspired design and offer eclectic seating options, including an indoor bar and lounge and partially covered outdoor back patio. The Caché Parisian speakeasy concept will be accessible through a refrigerator door at the rear of Libertad and will have a 50-seat sunfilled bar with live olive trees and large art murals. The cocktail menu will offer drinks created by Cervantes Magaña, as well as French wines and beers.
Libertad is a modern taqueria with both indoor and outdoor seating that will serve an eclectic menu of tacos on housemade tortillas using proteins cooked over an open flame on a custom wood-fire grill. The restaurant has taken the idea first instituted by Portland's The Oregon Public House, and will donate one hundred percent of the profits to a monthly-changing, area-based charitable organization. Charities will be required to submit an application for consideration with a short video, and, if chosen, will receive net profits from the month, no less than $3,000 guaranteed.
