Rubicon Deli, which currently operates three locations in San Diego and one in Reno, NV, is moving forward with plans to open two outposts in Arizona by Spring 2018 with more on the way.
Known for their fresh bread sandwiches, Rubicon Deli will soon expand to Arizona with plans to open a locations in Scottsdale and another in Phoenix. The Scottsdale location will sit at the corner of Scottsdale Road and Acoma Drive and is anticipated to open by year's end, while the Phoenix location will sit at Central & Virginia Avenues and aims to debut by Spring 2018. Both stores will be approximately 2,000 square-feet, with the Phoenix branch being a new building. Like the San Diego locations, the eateries will offer fast-casual counter service and a menu of fresh bread sandwiches, salads, and sides.
Marc Golan, Rubicon's chief financial officer has stated that the two Arizona stores will require an initial investment of more than $2 million. The company aims to open a total of 15 stores in the Phoenix area in the near future.
Rubicon Deli began in Lake Tahoe, owned by co-owner Evan Corsiglia's mother, Cheri. The original deli eventually moved to Reno, NV, where Evan received an invaluable education that he would eventually build on for his own sandwich empire, as he learned to bake many styles of rolls, including garlic cheese, jalapeño jack, pesto, blue cheese and more, which Rubicon's San Diego locations - Mission Beach, Mission Hills & La Jolla - continue to bake fresh every morning.
