The husband-and-wife team behind Oceanside's popular Wrench & Rodent Seabasstropub is in the process of seeking a location to open The Plot, a plant-based no-waste restaurant and catering service.
From Chef Davin & Jessica Waite, the married duo behind Oceanside's dual concepts Wrench & Rodent Seabasstropub and The Whet Noodle, The Plot will continue the couple's practice of total utilization of ingredients and build on the waste minimizing techniques that have made their restaurants so admired by sustainability seekers. Jessica, who has been on a vegan diet for most of her adult life, is currently working to identify possible locations to evolve The Plot from mobile catering service to a full brick-and-mortar restaurant.
"We currently own and operate two restaurants that are plant and seafood-centric," explained The Plot co-founder Jessica Waite. "We have been lucky enough to work with local farms and fishermen, and understand that the most sustainable and tastiest products are those that are sourced locally and seasonally. Davin has been offering vegan options on his menus since 2004, and believes strongly that moving in a plant-based direction is the right thing to do."
Like Wrench & Rodent, which has been offering a vegan omakase (chef's choice) option since it opened in 2013, the menu at The Plot will change with the seasons as products and produce become available. Expect items like banana peel tacos, beet nigiri, tomato crudo, and a full range of rotating plant-based sushi.
