KO Undergound has moved into the 15,000 square-foot, two-story building that last housed Infuzon sushi bar on the border of downtown San Diego and Bankers Hill. Inside the standalone building's basement, a 7bbl brewhouse with one 7bbl fermenter, and one 7bbl bright tank will be used by owner/head brewer Erick Villar to produce rustic Saisons and varieties of hoppy ales, Russian-style stouts, porters, and unique beers with Latin American ingredients.
KO Underground will offer a sophisticated decor throughout its two sprawling levels with paintings from local artists, wooden barrel furniture and a quaint outdoor patio. The restaurant will offer Latino-inspired cuisine and pub style appetizers, and in addition to housebrewed and guest beers, there will be a full bar with handmade craft cocktails. The business will frequently offer an array of live entertainment.
KO Underground's is located at 1320 Fifth Avenue and the official grand opening will take place once the brewhouse is up and running. In the meantime, the restaurant and bar is currently open Wednesday through Saturday from 12pm - 10pm, with a brunch menu offered on Sundays from 12pm - 5pm.
