Consortium Holdings latest creation, Raised By Wolves opens its doors on Monday, April 18, offering patrons of La Jolla's Westfield UTC an 1800s-style French Nouveau retail bottle shop with vintage spirits & bar accessories, as well as a reservation-only cocktail palace with a hidden entrance behind a 360 degree revolving fireplace mantle. Designed by San Diego-based Paul Basile of Basile Studio, Raised By Wolves combines a retail bottle shop and bartending accessory store with a speakeasy-esque hidden cocktail bar and lounge. Once patrons walk through the wolf head lined front doors, they will enter the beautifully designed bottleshop, decorated with murals of the French countryside. Extraordinary spirits will be displayed behind locked glass, ranging in price from $20 bottles to nearly-priceless vintage offerings. The shop will also stock everything from bitters and mixers to Consortium Holdings swag and apparel.
Expect drinks like Pelvic Sorcery with Solver Oak Whiskey, Bloody Shiraz liqueur, hibiscus, lime, absinthe and orange bitters. Another highlight is the Dreadlock Holiday with two types of Jamaican rum, Suze Gentian liqueur, Blanco vermouth and pineapple liqueur. There will also be a list of wines and area beers, including a Modern Times and False Idol collaboration spiced pineapple pilsner.

Behind a rotating "secret" door that also serves as a wolf-headed fireplace mantle, guests can enter the reservation-restricted, oak-lined speakeasy that's designed to appear like a ballroom-style antique library surrounded by book shelves, booths, and tables lined with items like chess boards. A stained glass and brass gazebo-like roof sits over the main bar, which boasts a beautiful fountain at its center, with the ceiling paneling lined with LED lights to brighten and darken in sequence with the outdoor lighting change from dawn to dusk. The bar will have a killer cocktail menu from an all-star mixology team that includes CH director of beverages Anthony Schmidt, Polite Provision's lead man Erick Casto and Chris Patino of cocktail-focused boutique marketing agency Simple Serve.
