Liberty Call Distilling To Open Coronado Bar With Onsite Chef-Driven Restaurant

Moving into the space that last housed Shima Japanese Steahouse in Coronado is a bar and restaurant from Liberty Call Distilling Co., with a kitchen led by San Diego chef Miguel Valdez, who previously worked as Executive Chef of The Red Door in Mission Hills.

Liberty Call Distillery was founded in Spring Valley in late 2014 by Coronado natives Bill Rogers and Steve Grella, who always knew that they wanted to one day bring their business back to their home neighborhood. Liberty Call started out producing a white rum, spice rum and gin, but have added a barrel-aged rum and four-grain whiskey to their lineup of locally distilled spirits. Moonshine, single malt whiskey and vodka are coming soon.

For Liberty Call's menu, Executive Chef Miguel Valdez will continue the responsibly-sourced cuisine for which he was revered during his tenure at The Red Door in Mission Valley, known as one of San Diego's original farm-to-table restaurants where Valdez spent the majority of his culinary career. The menu will also have a Mexican influence. The restaurant will also serve craft cocktails made with Liberty Call spirits, as well as offer full bottles for takeaway.
