Unveiling in San Diego's North Park community on Saturday, June 8 is the highly-anticipated second outpost of Las Vegas plant-based hotspot The Modern Vegan, a wholly vegan bar & restaurant with an extensive menu of more than 100 different dishes.
After more than a year of preparations, The Modern Vegan will finally open its San Diego location on June 8, boasting 3,200 square-feet of dining space with the eventual addition of an outdoor patio. The restaurant will offer a clean and modern decor with white tables and chairs, black accents, chain curtains, grass on the walls and bar, cool art installations, and distressed concrete floors.

After more than a year of preparations, The Modern Vegan will finally open its San Diego location on June 8, boasting 3,200 square-feet of dining space with the eventual addition of an outdoor patio. The restaurant will offer a clean and modern decor with white tables and chairs, black accents, chain curtains, grass on the walls and bar, cool art installations, and distressed concrete floors.
"The Modern Vegan is a restaurant where you can indulge in the vegan food of your dreams" explained founder Gia Schultz. "Created for vegans and non-vegans alike, we want to break all stereotypes where veganism is concerned and prove that vegans eat bomb food! There is a lot more to our diet than people think. Anything can be veganized. We have a very extensive menu with about 170 items and specialize in gourmet American comfort food - all cruelty free!"
The Modern Vegan's behemoth of a menu will offer an eclectic array of appetizers, breakfast and lunch favorites, skillets, waffles, sandwiches, burgers, soups, acai bowls, salads and desserts - all 100% plant based. Highlights include the Chick’n and Waffles, Mac n Cheese Baseballs, Louisiana Fried Chick’n, Biscuits and Gravy, Steak n V’Eggs, Philly Cheesesteak, V’Eggs Benedict, a Reuben, and the deep fried peanut butter and jelly sandwich. There will also be plenty of gluten-free options that are marked on the menu. In addition to eventually having a full bar with cocktails, beer, wine and kombucha, the restaurant will also serve a lineup of smoothies, wellness shots, milkshakes, juices and sodas. The eatery will operate as a full service coffee shop during morning hours with a variety of fresh-baked pastries in addition to full breakfast plates.
