The father-and-son team behind Leucadia's popular Le Papagayo restaurant is in the process of taking over the Carlsbad location of Cold Beer & Cheeseburgers.
In March 2019, Arizona-based Cold Beers & Cheeseburgers, which entered America's Finest City with the opening of a downtown location in fall 2016, took over the 5,400 square-foot space that last housed 83 Degrees in Carlsbad Village for the opening of a second area outpost. Although the Gaslamp Quarter branch is expected to reopen this fall, the Carlsbad location of CB&C is in the process of being sold to Darrin Campbell Sr. and Jr., who own Le Papagayo in Leucadia and Beachside Bar & Grill in Encinitas.
The Campbells will soon shutter Cold Beers & Cheeseburgers in Carlsbad and begin rebranding the space to become the second area outpost of Le Papagayo. Like the original location, which first opened in 2003, there will be a Latin American and Mediterranean fusion menu in the hands of native San Diegan, Executive Chef Michael Lina, who joined the team this year after previously working in the kitchens at Union Kitchen & Tap in Encinitas and Crush Solana Beach. Expect a spacious indoor dining area with a newly built stage for nightly live music. There will also be an expansive outdoor patio and a full bar with craft cocktails, wine and local beer.
"We've been looking at Carlsbad for a long time to expand the Le Papagayo footprint, being patient to find the best outlet for us," explained Le Papagayo owner Darrin Campbell Jr. "We are excited to bring a live music atmosphere to the community. We think it will be a really big plus for the neighborhood and we are excited to get started!"
After opening Le Papagayo in Carlsbad, the Campbells will turn their attention on revamping and reconceptualizing their Beachside Bar and Grill in Encinitas. Plans have already been submitted to the city to do a large-scale remodel.
The second Le Papagayo restaurant is anticipated to open as early as this December at 660 Carlsbad Village Drive in Carlsbad. For more information, visit lepapagayoleucadia.com.
