After more than a decade of home brewing, Rawley Macias opened bicycle-themed Rouleur Brewing in H.G. Fenton’s Brewery Igniter space in San Diego's North County community of Carlsbad. Looking to expand to central San Diego, Macias recently secured a lease on the 1,700 square foot space that housed the short-lived Belgian Beer and Waffle restaurant on University Avenue near The Observatory theater overlooking the North Park sign.
Rouleur Brewing's incoming North Park location will have an onsite kitchen with an American comfort food menu designed by consulting chef Tyson Blake, a co-owner of O'Brien's Pub in Kearny Mesa and West Coast Smoke and Tap House in La Mesa. The space will also have a cafe component with a coffee program from Nikki Peterson, who previously founded Old Town Coffee in Wyoming.
