Swagyu Burger Restaurant & Wagyu Butchery To Open In San Diego's North County City Of Encinitas

July 28, 2021

The fourth San Diego branch of Wagyu beef butcher shop and chef-driven burger restaurant Swagyu is opening in the Encintas space previously occupied by Schooner Station Pizzeria & Sports Pub.

Chef Steve Brown opened his first Swagyu Chop Shop last summer at 1002 Palm Avenue in Imperial Beach and already has another location in Poway that is currently in the process of relocating to a nearby space and expanding to include an onsite burger eatery. Late last year, Brown took over the 19-year-old Isabel's Cantina in Pacific Beach for a pop-up location of his butcher shop. He has since permanently secured the restaurant space and opened the flagship branch of his Swagyu Burger & Chop Shop, which recently introduced a full dinner and Sunday brunch menu.

Set to open in early 2022, the fourth Swagyu Burger & Chop Shop will include an onsite butcher shop burger restaurant and steakhouse. The butchery will serve cuts of A5 Wagyu and other specialty meats and the restaurant will offer a menu of smashed burgers, katsu sandwiches, and cooked steaks customers can choose directly from the meat counter. There will also be a dedicated area where Brown will serve his special multi-course steak meals. Swagyu Burger & Chop Shop will serve beer, wine and specialty sake to compliment it's food offerings.

The newest Swagyu Burger & Chop Shop will sit at 481 Santa Fe Drive in Encinitas. For more information, visit swagyu.square.site.
