Hillstone Restaurant Group got its start when George Biel opened the first Houston's Restaurant in 1977 in Nashville, Tennessee. The company now has 48 restaurants around the United States, with a third of its concepts located in California. Restaurant brands under the Hillstone umbrella include Hillstone, Houston’s, Bandera, Cherry Creek Grill,East Hampton Grill, Gulfstream, Hillstone at Bal Harbour, Honor Bar, Los Altos Grill, Palm Beach Grill, R+D Kitchen, Rutherford Grill, South Beverly Grill, White House Tavern, and Woodmont Grill.
Hillstone has been eyeing property in San Diego for more than eight years. In July 2017, the company presented site plans to the city of Del Mar's Design Review Board to build a restaurant in the space that was occupied by Bully's North from 1969 until it closed in late 2017.
Originally, the company presented plans to Del Mar for a 5,200 square-foot restaurant with a three-level parking garage to be installed after a complete demo of the longtime Bully's building. They then agreed upon a 4,500+ square-foot restaurant with underground parking. Hillstone previously planned to open a location of its R+D Kitchen concept, which has locations in Newport Beach, Santa Monica, Yountville, and Dallas. This project is the first new commercial building to be constructed in downtown Del Mar in more than 30 years.

Hillstone has changed plans and will now open a branch of Gulfstream restaurant at the former Bully's site. Gulfstream is an American eatery & bar that first opened in Newport Beach, CA, in 1999. The restaurant features daily seafood specials and a full bar with a modern, marine-themed space. Highlights from the menu include True Dover Sole, which is flown in from the North Atlantic, Cedar Plank Scottish Salmon, and Vince’s Fried Shrimp. For more terrestrial fare, there is the USDA Prime ‘The Duke’ Filet Mignon and the Classic Cheeseburger with freshly ground chuck steak.
