The Las Vegas-based hospitality company behind such San Diego hotspots as Lionfish in the Gaslamp and Serea at Hotel Del Coronado is bringing a Bing Crosby-inspired bar and chef-driven restaurant to a 100-year-old San Diego resort.
In San Diego, Clique developed Lionfish, Oxford Social Club, and The Pool House for downtown's Pendry San Diego hotel, Serēa Coastal Cuisine at Hotel Del Coronado, three concepts at San Diego's Sycuan Casino, Temaki Bar Handrolls & Sake in Encinitas, and Joya Organic Kitchen in Torrey Pines. Clique Hospitality is also opening a pair of all-day restaurants within the currently under-construction Torrey View by Breakthrough 10-acre life sciences campus being built in Torrey Pines.
In 2022. Steve Hermann Hotels purchased the Inn at Rancho Sante Fe for $43 million but sold it last month to institutional investment fund, Chicago-based GEM Realty Capital, for $100 million. This past May, then ownership announced a $50 million renovation that was originally anticipated to be completed this summer, but now has been delayed until November. The 21-acre hacienda-style hotel has remained largely closed since this past spring.
As part of the property's multi-million dollar renovation, Inn at Rancho Sante Fe's main restaurant, previously named Moranda, will become a new concept dubbed Lilian's. Named after the architect Lilian J. Rice, who championed the development of Rancho Sante Fe and designed the original Inn at Sante Fe building, the restaurant will offer a vintage Hollywood-inspired design with a locally-driven menu from Executive Chef Moira Hill. Chef Moira is a San Diego native who previously worked locally at Nolita Hall, Water Bar, Juniper & Ivy, Campfire and Trust.
The Inn's onsite bar will also be rebranded into Bing Bar, named after Hollywood legend Bing Crosby, who once lived in Rancho Sante Fe and was instrumental in the development of the Del Mar Racetrack. The cocktail bar will house an old London bar, a classic fireplace, and offer a menu of shareable place.
Lilian's and Bing Bar are expected to open this November at 5951 Linea Del Cielo in San Diego's Rancho Santa Fe community. For more information, visit theinnatrsf.com.
