Now open in the space that last housed Level 9 Rooftop Bar at Hotel Indigo is Borrego Kitchen & Cocktails, a desert-inspired, rooftop lounge and restaurant with expansive views of downtown San Diego's Gaslamp Quarter and Petco Park.
Named for California’s largest state park, Borrego Kitchen & Cocktails is now open on the ninth floor of downtown San Diego's Hotel Indigo. Inspired by the Borrego desert, the rooftop bar and restaurant aims to transport guests into a vibrant outdoor destination with a thrilling view of Petco Park.
Borrego Kitchen & Cocktails will include three meetings rooms, an al fresco dining area and a central bar. The restaurant will serve California cuisine with global influences with a menu focused on shareable plates. The bar will have beverage program created by Lowder Tascarella Hospitality, which will include craft cocktails, hard beverages and wine.
Highlights from Borrego Kitchen's menu include a dandelion greens salad with shaved watermelon radish, crispy spring onions, pumpkin seeds and lemon vinaigrette; hibiscus-cured Kanpachi with green herb aioli, tequila, lime, jalapeños and microgreens; Cochinita sliders with slow-roasted pork shoulder marinated in tomato-citrus and pickled red onion; and roasted halibut with chimichurri and sunchoke puree.
