Real estate developer Michael Donovan of SDPB Holdings, LLC, who initially envisioned a German-style beer hall for the location, has shifted gears to partner with Collin Corrigan, a San Diego native who has lived in Mexico for over two decades, to bring a bi-cultural experience to the community. Corrigan is the founder of Ensenada's popular Cerveceria Transpeninsular craft brewery and previously operated El Cruce + 241 on Third Avenue in Chula Vista before selling the South Bay concept to Los Angeles-based Brewjeria craft brewing company last year.
The 3,500-square-foot venue, which includes 1,000 square feet of indoor space and a 2,500-square-foot outdoor area, aims to blend the relaxed, beachy vibes of Baja California with San Diego’s local flair, with Gaby Sánchez Corrigan spearheading the creative vision for the brand. The concept draws on Collin Corrigan’s deep ties to both regions, aiming to provide a fun, communal space for great food, drinks, and gatherings in the heart of San Diego.
"As every project has a back story, Una Mas on Adams has come together to showcase a small taste of our Baja culture blended with mutual deep ties to the hometown San Diego," explained Corrigan. "Our mission is to present a fun place for all to enjoy in an open relaxed indoor/outdoor environment. Without a doubt this location, menu concept, beverage plan along with a veteran staff will not let you down. This will a place for great food, drink and gathering smack dab in the middle of the heart of San Diego and we cannot wait to share our passion to the community."
The al fresco space will feature fire pits, shade sails, and family-friendly hangout spots, creating an open, inviting environment. A food trailer will also be stationed outside to complement the indoor dining experience, offering a fusion menu that blends Mexico favorites with local San Diego ingredients. The beverage program will highlight 20 taps featuring beers from San Diego pioneer breweries such as Ballast Point, Pizza Port, Coronado Brewing Company, and Karl Strauss, alongside selections from Ensenada, Mexicali, and Tijuana, reflecting the cross-border influence.
The project marks a significant pivot from Donovan's original plan, announced in May 2024, for Adams Avenue Beer Garden, which was set to be a German-style biergarten with a focus on local brews, Southern California and Baja wines, and a menu of California-Mexican tavern fare, including breakfast and brunch items. The shift to Una Mas reflects a more intentional focus on Baja's cultural influence, aligning with the growing trend of cross-border culinary fusion in San Diego’s dining scene.
